Social impact, neurogastronomy and inclusive leadership mark Alimentec 2026's third day
On its third day, Alimentec | Anuga Select Colombia puts on the table conversations that go beyond business: social responsibility, consumer behavior science, and Colombian culinary identity set the tone for this session.
The day organizes its activities around three axes: social impact and sustainability, with spaces on food insecurity and food waste; science and new consumption habits, with global data analysis, the effect of GLP-1 therapies, and a live neurogastronomy demonstration; and Colombian culinary culture and identity, with the SENA's "Living Kitchens of Colombia" roundtable and the panel "Women Leading the Transformation of Food and Beverages in Latin America," featuring Mila Valcárcel (Spain) and, from Colombia, Ximena Wagner, Liliana Restrepo, and Marcela España.
Food Innovation Summit
The Food Innovation Summit, at the Main Auditorium, will bring together global experts to analyze the data and phenomena redefining food consumption. The agenda includes a presentation by Innova Market Insights on trends in Latin America; a talk on the impact of GLP-1 medications on new consumption habits; Andrea Meneghini's (Italy) analysis on the transformation of mass retail in South America; the panel "Women Leading the Transformation of Food and Beverages in Latin America"; and a session on clean label trends. The closing will be led by Rodrigo Ramírez with a reflection on the paradox of food waste in a world that needs it.
Cooking Show
The Cooking Show, at Pabellón 18 Gran Salón, will combine culinary identity, high-level technique, and the science of flavor. Attendees will enjoy demonstrations on hot sauces, Pacific coast cuisine, the live plating of a Bocuse d'Or tray, and the closing of Leonardo Marín with a neurogastronomy demonstration exploring how sensory stimuli build flavor beyond taste.
Cooking Show Origin Matters
The Cooking Show Origin Matters, at Pabellón 6.1, will explore origin and cultural memory as its central thread. The program includes a demonstration on mushrooms and their use in Colombian cuisine; Andrea Ariza's exploration of how corn, coffee, and panela reach high cuisine without losing identity; and a talk by Víctor De La Hoz on national ferments and distillates in the new cocktail culture.
Bake & Arts
Bake & Arts, alongside ADEPAN, at Pabellón 3 (Level 2), will bring together specialists in bakery, pastry, and confectionery. The program features demonstrations by Didier Rosada (France) on sourdough and specialty breads; talks on soy flour and eggs as functional ingredients; the perfect puff pastry show by Pedro Fandiño and Carlos Bracho; traditional cakes by Camila Elizalde; and the closing on sourdough as a tool for engineering and profitability.
HORECA Talks
The HORECA Talks, at Pabellón 3 (Level 2), will address sustainability, operational standardization, and culinary identity. The agenda includes conferences on sustainable poultry farming and animal welfare (FENAVI), packaging for prepared foods (MULTIVAC), a guided olive oil tasting, the SENA's "Living Kitchens of Colombia" roundtable, and a talk by Alpina Food Service on how dairy products can become the greatest value generator on the menu.
HORECA Talks Origin Matters
The HORECA Talks Origin Matters, at Pabellón 6 (Level 1), will focus on sustainability, food security, and innovation from origin. The program includes the journey of palm oil from the field to Colombian baking (Distribuidora Brahman), the impact of hunger on the national economy (ABACO), the future of conscious snacking (Simple Market), the challenges of meat ingredients (Vilaseca), and how to turn food waste into a competitive advantage (Cheaf Technologies).
