As a consultant, he has collaborated with various restaurant and hotel chains in both Colombia and the United States, contributing his expertise and knowledge in the gastronomic field. He is distinguished by his outstanding performance as the Chef in charge of the United States Olympic Committee. His international career has led him to work in renowned culinary establishments in Switzerland, France, the United States, and Colombia. Notable among these are Brasserie Georges in Lyon, France; Bäckerei Streuli in Basel, Switzerland; Seviche in Louisville, Kentucky, United States; as well as his contributions to renowned Colombian restaurants such as Pajares Salinas, Frites Artois, and Vista Corona, among others. Additionally, he has shared his experience as a professor and director of the Gastronomy Program at the University of La Sabana. His leadership has been evidenced in executive roles in leading sector companies, where he has held managerial positions in key areas such as Food and Beverage, Logistics, Strategic Planning, Production Plants, and Expansion. Currently, he serves as Minister of Gastronomy and Corporate Chef at Andrés Carne de Res-Kokoriko-Mimos, Grupo IGA, consolidating his experience and passion for gastronomy in a highly significant executive role.
